Food Adulteration

Any ingredient or substance added to a food item in order to increase its quantity, preserve it for a long time or make it appealing is called an adulterant. This act of addition of adulterants in food items is known as food adulteration. The chief reason for the addition of these adulterants is to increase the profit margin at the cost of the health of the general public or consumers. It is an awful offense committed by the greedy businessmen. Even, in hotels and restaurants, stale and rotten foods are mixed with fresh food and served to the customers. Fishes and vegetables are adulterated by applying chemicals and other preservatives in order to make them look fresh. In fact, all kinds of foods and food articles are adulterated by dishonest and greedy businessmen for a quick and larger profit. Adulterants reduce the quality of the foods and damage the health of the consumers. Regular consumption of adulterated foods can lead to vital health problems. Different reports show that adulterated foods are causing serious diseases including diarrhea, dysentery, diabetes, cancer, heart attack, brain stroke, etc, round the year. The government has set mobile courts to detect and punish the dishonest people. Although such steps have been taken to prevent food adulteration, these are not sufficient at all. In fact, it is not possible for the government to solve food adulteration problem all alone. Public awareness should be created so that people stop buying adulterated foods and food articles. We should raise our voice against food adulteration and prevent it so that the present and the future generation may remain safe and sound.

খাদ্যে ভেজাল (বিষক্রিয়া)

যেসব দ্রব্য বা উপাদান খাদ্যের পরিমাণকে বৃদ্ধি করতে, বাহ্যিক আবরণকে চকচকে করে লোভনীয় করতে এবং দীর্ঘদিন সংরক্ষণ করতে যোগ করা হয় সেসব দ্রব্যকে ভেজাল বলা হয়। খাদ্যে এসব ভেজাল দ্রব্য মিশ্রণ প্রক্রিয়াকে খাদ্যে ভেজাল মিশ্রণ বা বিষক্রিয়া বলে। সাধারণ মানুষ ও ভোস্তার স্বাস্থ্যহানির বিনিময়ে লাভের পারদকে উর্ধ্বগতি করাই ভেজাল মিশ্রণ এর অন্যতম প্রধান কারণ। এটা ব্যবসায়ীদের অত্যন্ত ঘৃণ্যতম একটি অপরাধমূলক কাজ। এমনকি, হোটেল এবং রেস্তোরাঁগুলোতে সতেজ খাবারের সাথে নষ্ট বাসি খাবার মিশ্রিত করে ক্রেতাদের পরিবেশন করা হয়। মাছ এবং তরিতরকারিতেও বিভিন্ন রাসায়নিক দ্রব্য মিশ্রিত করা হয় যাতে অনেক সময় অবধি সেগুলো তরতাজা দেখায় এবং রক্ষণাবেক্ষণ করা যায়। এক্ষেত্রে, খাদ্য ও খাদ্য সামগ্রী সবই অসৎ ও লোভী ব্যবসায়ীদের দ্রুত ও অনৈতিকভাবে লভ্যাংশ আয়ের খাতে চলে গেছে। খাদ্য মিশ্রিত এসব ভেজাল দ্রব্য খাদ্য গুণাগুণ নষ্ট করাসহ গ্রহণকারীর শরীরকে দুর্বল করে দেয়। প্রতিনিয়ত ভেজাল খাদ্য গ্রহণের ফলে বিভিন্ন শারীরিক সমস্যা দেখা দিতে পারে। বিভিন্ন প্রতিবেদন সমীক্ষায় দেখা গেছে এসব ভেজাল মিশ্রিত খাদ্য সারাবছর ধরে পাতলা পায়খানা, আমাশয়, ডায়াবেটিস, ক্যান্সার, হৃদরোগ, স্ট্রোক প্রভৃতির মতো মারাত্মক রোগের কারণ হিসেবে প্রতিফলিত হয়েছে। সরকার এসব অসাধু ব্যবসায়ীদের শাস্তি দেওয়ার জন্য এবং ভেজাল খাদ্য শনাক্ত করার জন্য মোবাইল কোর্ট বসিয়েছে। এরপরও যে সব পদক্ষেপ ভেজাল খাদ্য দূরীকরণের জন্য নেওয়া হয়েছে তা পর্যাপ্ত নয়। প্রকৃতপক্ষে, সরকারের একার পক্ষে ভেজাল খাদ্য দূরীকরণ সম্ভবপর নয়। জনগণের মধ্যে সচেতনতা গড়ে তুলতে হবে যেন তারা ভেজাল মিশ্রিত খাদ্য ও খাদ্য সামগ্রী ক্রয় না করে। ভেজাল খাদ্যের পরিপ্রেক্ষিতে আমাদের সোচ্চার হতে হবে যাতে বর্তমান ও আগামীর ভবিষ্যৎ সুস্থ ও সুরক্ষিত থাকে।
